Udon Stir Fry

My friend was constantly telling me how she makes udon stir fry for almost every meal, and how good it is. So, I decided to try to make it with her help! She makes it very often that she does not follow a specific recipe, but eyeballs amounts to her satisfaction.
First, we boiled the water and put the frozen udon in to cook until the noodles were separated and soft. Second, we drained the water by pouring the udon and water through a sift. After that, we started up a pan with sesame oil and added the garlic, spinach and carrots to cook. Once the vegetables were starting to cook, we added the cooked udon back in and added more sesame oil, soy sauce, red chilli pepper powder, and sugar. SUGAR WAS KEY FOR THIS! I taste tested the stir fried udon and vegetables before I added the sugar and it was good, but felt as if something was missing. After I added the sugar and taste tested the udon, it was really a game changer. The sugar added the perfect balance of sweet and savoury and just tasted so good!
I do not even know how to describe the taste except to say try it for yourself! I added lots of soy sauce (about 3 teaspoons), lots of sesame oil (enough to cover the pan), a quarter teaspoon of red pepper chilli flakes, and about 1.5 teaspoons of sugar! For the vegetables, I just added as much as I felt necessary. So feel free to add how much you want in your meal!
Overall, I really loved this meal and would definitely make it again. It was also fun to make with my friend!

Hey Meg! I love udon and this looks amazing. One of my favourite things about udon is how soft the noodles get. My favourite udon is from Nubo on Wharf Street, you should definetly check it out. I love cooking with my friends it makes it much more enjoyable! I am so glad you had a good meal, I would definetly want to try to make this recipe!
