Tofu and Vegetable Stir Fry

This week I was super busy and not home very often! So, I was trying to figure out something quick and easy to make! I decided to make Tofu and Vegetable Stir Fry!
This week I did not even follow a recipe or look anything up! I completely cooked by eye and approximated all my ingredients! I used this as lunch for both my parents and I.
For the vegetables, I did not choose anything specific. I chose vegetables that I knew my family and I like, and also that I thought would taste good! The veggies I chose were onions, zucchini, broccoli, and mushrooms! For the tofu, I chose to use egg tofu! I chose egg tofu because I prefer a softer tofu and thought it would go well with my vegetables. However, this tofu does easily crumble, so if you prefer something harder, I would stick with the tofu cubes.
As you can see in the video, I have little chunks that almost look like garlic. However, that is the egg tofu. This is because I tried to cook everything together and I did not realize how easily the tofu crumbled! So instead of having circular pieces of egg tofu, I had it mixed in with the vegetables! Either way it tasted really good, however, I feel I could not get the full taste of tofu because it was so mixed in with the other vegetables!

If you are wondering what sauces I used I have attached a photo below! I will also list them here:
- Sesame Oil
- Oyster Sauce
- Soy Sauce
- Dark Soy Sauce
When I cooked the vegetables with the sauce I just eyeballed the sauces until I thought it looked flavourful enough!
Overall, I loved this dish and I thought it was delicious. I would definitely make this again and recommend it!

Hey Meaghan! I can totally relate to not having the time to cook whether it just not being home or having just so much homework. This stir fry is making my mouth water! I love just being able to throw veggies in a pan with some sauce. Thanks for listing out the different sauces you used! I can’t say I’ve used sesame and oyster sauce together but I’ll definitely give it a try next time!
