Alfredo Pasta

This week up in Parksville, I cooked dinner for my friends and I! I decided to cook Alfredo Pasta because it is quick and easy and we were all hungry!
When cooking this Alfredo Pasta, I decided not to follow a recipe. I had an idea of how to cook pasta, because I knew I had to boil the pasta first, then boil the sauce, and mix them up together. I decided to go with penne for this pasta, and I found a jar of garlic Alfredo sauce at Thrifty Foods that I wanted to try! Because some of my friends were vegetarian, instead of doing chicken, I used mushrooms! Honestly, the mushrooms were my favourite part. I think it mixed perfectly with the Alfredo sauce! Another thing I added was cheese. However, I did not go the classic route using cheddar cheese, I decided to use Halloumi cheese. I fried some up on a pan and added it into the pasta. To be honest, I enjoyed the Halloumi cheese fried up by itself, and not in the pasta. I think I may have cut the pieces of cheese too thick, and therefore it was too chunky in the pasta.
Overall, I will say I enjoyed this dish and will make it again because it was easy and quick to make. However, next time I think I will need to add more seasonings such as salt and pepper, and garlic powder, to increase the flavour in the pasta. I also decided that I did not like the Halloumi cheese in the pasta, and that I want to use fresh grated Parmesan cheese next time. I think by grating the cheese it will decrease my chances of having chunky pieces in my pasta.

Hi Meaghan,
Your Alfredo pasta with mushrooms reminds me of what I like to order when I go to Old Spaghetti Factory. I always getting a mushroom Alfredo pasta with penne noodles. They also grate parmesan cheese on top. It is sooo good. Your blog post reminded me of how much I want to go get this dish again!
